- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 12 ounces pasta (fettuccine or linguine)
- 4 cups beef or vegetable broth
- 1/2 cup dry white wine (optional)
- 1/2 cup heavy cream
- 1 cup shredded Gruyère or Swiss cheese
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley for garnish
Instructions
- Caramelize the Onions: In a large pot or deep skillet, heat butter and olive oil over medium heat. Add onions, salt, pepper, and sugar. Cook for 20–25 minutes until deeply golden. Add garlic and thyme.
- Cook the Pasta: Pour in white wine to deglaze. Stir in pasta and broth. Simmer for 10–12 minutes until al dente.
- Finish the Dish: Stir in cream, Gruyère, and Parmesan until creamy. Garnish with parsley and serve hot.
