Vegetables & Garnish
- 1 cup cherry tomatoes
- 2 cups baby spinach
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions

- Add Broth and Simmer: Pour in vegetable broth and bring to a gentle simmer.
- Cook Pasta: Add pasta to the pot and cook according to package instructions, stirring occasionally, until al dente and most of the broth is absorbed, approximately 10-12 minutes.
- Create Creamy Sauce: Stir in hummus, lemon juice, and lemon zest until the sauce is smooth and creamy, coating the pasta evenly.
- Add Vegetables: Mix in cherry tomatoes and baby spinach, cooking for 2-3 minutes more until the tomatoes soften and spinach wilts.
- Season and Serve: Season with salt, pepper, and crushed red pepper flakes to taste. Serve warm topped with chopped fresh parsley.
Notes
- Use roasted garlic or red pepper hummus to enhance flavor depth.
- Add grilled chicken or chickpeas to increase protein content.
- If the sauce thickens too much, loosen with a splash of vegetable broth or reserved pasta water.
