Chicken:

- 1 red bell pepper (chopped)
- 1 small red onion (chopped)
- 2 cloves garlic (minced)
Seasonings:
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes (optional)
Garnish:
- 2 tablespoons chopped fresh parsley or cilantro (for garnish)
Instructions
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt, pepper, smoked paprika, and cumin. Cook for 6–8 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and cook for 10–12 minutes, stirring occasionally, until starting to soften. Add the red bell pepper, onion, and garlic. Cook for another 5–7 minutes, or until all the vegetables are tender and slightly caramelized.
- Combine and Serve: Return the cooked chicken to the skillet and stir everything together. Cook for 1–2 more minutes to reheat and blend flavors. Taste and adjust seasoning if needed. Garnish with fresh parsley or cilantro and serve warm.
Notes
- For a shortcut, microwave sweet potatoes for 3–4 minutes before adding to the skillet to reduce cooking time.
