Instructions
- Heat the oil: Heat the oil in a large pot over medium-high heat. Brown the beef chunks on all sides, working in batches if necessary. Remove and set aside.
- Sauté aromatics: In the same pot, add garlic, ginger, and scallions. Sauté for 1–2 minutes until fragrant. Add tomatoes and cook for another 2 minutes. Return the beef to the pot and pour in soy sauce, dark soy sauce, rice wine, and beef broth. Add star anise, cinnamon stick, bay leaf, and sugar. Bring to a boil, then reduce to a simmer. Cover and simmer for 2.5 to 3 hours, or until the beef is very tender. Skim off any excess fat. Taste and adjust salt if needed.
- Cook noodles and greens: Cook the noodles according to package instructions. In a separate pot, briefly blanch bok choy or spinach until just tender.
- Serve: To serve, place noodles in bowls, ladle the rich broth and beef over the top, and garnish with greens, chopped scallions, cilantro, pickled mustard greens, and chili oil if desired.
Notes
- For extra depth of flavor, prepare a day ahead and let it rest in the fridge overnight.
