Vegetables:
- 1/4 cup olive oil
- 1 large eggplant, cut into 1-inch cubes
- 2 medium zucchini, sliced into half-moons
- 1 yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 5 ripe Roma tomatoes, chopped
Seasonings:
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 bay leaves
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- Salt and black pepper to taste
Instructions
- Cook Vegetables: Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium heat. Add the eggplant and cook until lightly browned and softened, about 5 minutes. Remove and set aside.
- Sauté Zucchini: Add another tablespoon of oil to the pot and sauté zucchini until just tender, then remove and set aside.
- Cook Bell Peppers: Repeat with the bell peppers, cooking until slightly softened, and set aside.
- Prepare Base: Add the remaining oil and sauté onion until translucent, then stir in garlic. Stir in tomatoes, tomato paste, thyme, oregano, basil, bay leaves, salt, and pepper. Simmer for 10 minutes.
- Combine and Simmer: Return the cooked vegetables to the pot. Stir well, cover, and simmer for 30-40 minutes until tender.
- Finish and Serve: Remove bay leaves, garnish with fresh parsley and basil. Serve warm as a main dish or side.

- For extra flavor, consider roasting the vegetables in the oven before combining them for a richer taste.
