Vegetables:

  • 1/4 cup olive oil
  • 1 large eggplant, cut into 1-inch cubes
  • 2 medium zucchini, sliced into half-moons
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 5 ripe Roma tomatoes, chopped

Seasonings:

  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 bay leaves
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook Vegetables: Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium heat. Add the eggplant and cook until lightly browned and softened, about 5 minutes. Remove and set aside.
  2. Sauté Zucchini: Add another tablespoon of oil to the pot and sauté zucchini until just tender, then remove and set aside.
  3. Cook Bell Peppers: Repeat with the bell peppers, cooking until slightly softened, and set aside.
  4. Prepare Base: Add the remaining oil and sauté onion until translucent, then stir in garlic. Stir in tomatoes, tomato paste, thyme, oregano, basil, bay leaves, salt, and pepper. Simmer for 10 minutes.
  5. Combine and Simmer: Return the cooked vegetables to the pot. Stir well, cover, and simmer for 30-40 minutes until tender.
  6. Finish and Serve: Remove bay leaves, garnish with fresh parsley and basil. Serve warm as a main dish or side.

  • For extra flavor, consider roasting the vegetables in the oven before combining them for a richer taste.
