Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking the beef Wellington.
- Cook Vegetables: In a frying pan over medium heat, warm the olive oil. Add the chopped onion, carrot, celery, potato, and rosemary. Fry for about 8 minutes until the vegetables are softened. Add the minced garlic during the last minute of cooking. Remove from heat and transfer the mixture to a large bowl, allowing it to cool completely.
- Combine Filling: Once the vegetables have cooled, add the minced beef to the bowl. Season the mixture with salt and black pepper, then add half of the beaten egg. Mix thoroughly until all ingredients are well combined.
- Prepare Pastry: Roll out the puff pastry on a floured surface to the size of a small tea towel. Arrange the beef filling evenly along one long edge of the pastry. Brush the exposed edges of the pastry with the remaining beaten egg.
- Form the Wellington: Carefully roll the pastry around the beef filling, sealing the edges securely and pinching the ends to enclose the filling completely. Place the roll seam-side down on a baking tray and brush the top with the remaining egg wash.
