- 1 can (14.5 ounces) diced tomatoes with green chilies
- 2 1/2 cups beef broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels, fresh, frozen, or canned
- 1 cup shredded cheddar cheese
- 1/2 cup Monterey Jack cheese
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Stir in onion, garlic, and bell pepper until softened.
- Add rice, tomatoes, broth, beans, corn, and seasonings. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes until rice is tender.
- Remove lid and stir in cheeses until melted. Garnish with cilantro and serve with lime wedges.
Notes
- For extra spice, add a diced jalapeño or a pinch of cayenne pepper.
