Instructions

  1. Sauté Garlic and Greens: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant and lightly golden.
  2. Cook the Greens: Add the chopped greens to the skillet and cook for 3-5 minutes, stirring occasionally, until they are wilted and tender.
  3. Add Beans and Seasonings: Stir in the drained white beans, dried oregano, red pepper flakes (if using), salt, and pepper. Cook for another 3-4 minutes, allowing the beans to heat through and absorb the flavors.
  4. Add Lemon and Finish: Remove the skillet from heat. Stir in the lemon zest and lemon juice. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
  5. Serve: Transfer the dish to a serving platter or individual plates. Garnish with chopped fresh parsley and crumbled feta cheese, if using. Serve warm as a side dish or light main course.

Notes

  • For a vegan option, omit the feta cheese garnish.
  • Use any sturdy leafy greens you prefer such as chard, kale, or spinach.
