- Sauté Shrimp: In a large skillet over medium heat, heat olive oil and butter until melted and hot. Add shrimp in a single layer, season with salt and pepper, and cook for 2–3 minutes per side until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.
- Prepare Sauce Base: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until garlic is fragrant but not browned.
- Add Liquids and Seasonings: Pour in the chicken broth and bring to a simmer while scraping up any browned bits from the bottom of the skillet for extra flavor. Stir in heavy cream, chopped sun-dried tomatoes, grated Parmesan cheese, and Italian seasoning. Allow the sauce to simmer for 3–4 minutes until it thickens slightly.
- Combine and Toss: Return the cooked shrimp to the skillet along with the reserved cooked pasta. Toss everything together to coat evenly in the creamy sauce. If the sauce seems too thick, slowly add reserved pasta water to loosen to desired consistency.
