Lobster Tails
- 4 lobster tails (5 to 6 oz each)
- 1 Tbsp fresh parsley (very finely chopped, plus more for garnish)
- 2 garlic cloves (pressed)
- 1 tsp Dijon mustard
- 1/4 tsp fine sea salt
- 1/8 tsp freshly cracked black pepper
- 1 1/2 Tbsp olive oil
- 1 1/2 Tbsp fresh lemon juice
- 4 Tbsp unsalted butter (divided)
Instructions
- Prepare and Butterfly the Lobster Tails: Using kitchen scissors, carefully cut through the top shell of each lobster tail, stopping at the base and snipping through the top portion of the meat. Then flip the tail over and crack the ribs in the center on the back side to help open the shell. Gently open the shell with your thumbs and fingers and loosen the meat from the shell, removing the vein if present. Lift the meat while keeping it attached at the base, then press the shell closed and set the lobster meat on top of the shell, exposing most of the meat.
- Preheat the Oven for Broiling: Place an oven rack in the upper third or center position so the lobster tails will be approximately 6 inches from the heating element. Preheat your oven to broil on high.
- Make the Marinade: In a small bowl, combine the finely chopped parsley, pressed garlic cloves, Dijon mustard, sea salt, black pepper, olive oil, and lemon juice. Mix well to create a flavorful marinade.
- Arrange Lobster Tails for Broiling: Place the butterflied lobster tails into a roasting pan (9×13 or 8×12-inch). Evenly divide the marinade over the tops of each tail and dot each with 1/2 tablespoon of the unsalted butter, cut into smaller pieces.
- Broil the Lobster Tails: Broil the lobster tails on high heat for 10 to 11 minutes, or adjust based on size, until the meat is opaque and white in the center and reaches an internal temperature of 145°F using an instant-read thermometer.
- Prepare the Garlic Lemon Butter Sauce: Drain the drippings from the roasting pan into a small saucepan, add the remaining 2 tablespoons of butter, and bring to a simmer. Remove from heat and pour over the lobster tails or serve in ramekins as a dipping sauce.
- Serve: Transfer the broiled lobster tails to a serving platter, garnish with additional fresh parsley if desired, and enjoy immediately.
