Description

This Loaded Baked Potato with Steak Bites recipe features tender oven-baked russet potatoes topped with juicy, flavorful steak cubes, melted cheddar cheese, crispy bacon bits, sour cream, and fresh green onions. Perfect for a hearty and satisfying meal, this recipe combines classic comfort food elements with a protein-packed twist.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes

Steak Bites

  • 1 lb ribeye or sirloin steak, cut into bite-sized cubes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

Toppings

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits or crumbled bacon
  • 1/2 cup sour cream
  • 2 tbsp green onions or chives, chopped

Instructions

  1. Preheat and Bake Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, then poke a few holes in each potato with a fork. Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  2. Cook Steak Bites: While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season the steak cubes with garlic powder, onion powder, salt, and pepper. Add the steak bites to the hot skillet and cook for 4-5 minutes, turning occasionally, until browned and cooked to your desired doneness. Remove from heat and set aside.
  3. Prepare Toppings: While the steak cooks, shred the cheddar cheese, cook and crumble the bacon, and chop the green onions or chives to have all the toppings ready to assemble your loaded potatoes.
  4. Assemble Loaded Potatoes: Once the baked potatoes are done, make a slit down the center of each potato and gently fluff the insides with a fork. Top each potato with a spoonful of sour cream, a sprinkle of shredded cheddar cheese, some steak bites, crumbled bacon, and a garnish of green onions or chives.
  5. Serve and Enjoy: Serve the loaded baked potatoes hot for a filling, flavorful meal featuring the perfect balance of creamy, savory, and meaty toppings.

Notes

  • You can use any cut of steak you prefer; sirloin or ribeye work best for tenderness and flavor.
  • For extra crispy skin, rub the potatoes with olive oil and salt before baking.
  • Adjust the seasoning on the steak bites to your taste preference, adding more or less garlic and onion powder.
  • If short on time, you can microwave the potatoes before baking to reduce oven time.
  • Leftover steak can be refrigerated and used in salads or sandwiches the next day.
