Noodles:
- 8 oz spaghetti or lo mein noodles
Chicken:
- 1 lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil, divided
Veggies and Nuts:
- 1 red bell pepper, chopped
- 1/2 cup roasted unsalted peanuts
- 4 green onions, sliced
- 4–6 dried red chilies (optional)
For the Sauce:
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup water
Instructions
- Cook Noodles: Cook noodles according to package instructions. Drain and set aside.
- Prepare Chicken: Coat chicken pieces in cornstarch. Brown in oil, then set aside.
- Sauté Veggies: In the same pan, sauté bell pepper, chilies, garlic, ginger, and green onions.
- Make Sauce: Whisk together all sauce ingredients. Add chicken, pour in sauce, and cook until thickened.
- Combine: Add noodles, peanuts, and heat through. Serve hot.
