Description

These Korean BBQ Meatballs are bursting with flavor and served with a delicious spicy mayo dip. They’re perfect as appetizers or paired with rice for a satisfying meal.


Ingredients

Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Spicy Mayo Dip:

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 teaspoon lime juice

Instructions

  1. Meatballs: Preheat oven to 400°F (200°C). Mix all meatball ingredients, roll into balls, and bake for 15–18 minutes.
  2. Sauce: Combine all sauce ingredients in a pan, simmer, and coat cooked meatballs.
  3. Spicy Mayo Dip: Whisk together mayo, sriracha, and lime juice for dipping.
