Instructions
- Season and Sear Chicken: Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the hot skillet and sear each side for 4–5 minutes until golden brown and cooked through, reaching an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
- Prepare Peach Jalapeño Glaze: In the same skillet, melt the butter over medium heat. Add the minced garlic and thinly sliced jalapeño, cooking for about 1 minute until fragrant. Stir in honey, apple cider vinegar, soy sauce, and Dijon mustard until combined.
- Add Peaches and Simmer: Add the sliced peaches to the skillet and cook for 3–4 minutes, allowing them to soften and the glaze to thicken into a saucy consistency.
- Return Chicken and Coat: Place the seared chicken breasts back into the skillet with the peach-jalapeño glaze. Spoon the glaze over the chicken and simmer together for 2–3 minutes to rewarm the chicken and fully coat it with the sauce.
- Garnish and Serve: Remove from heat, garnish with fresh basil or cilantro if desired, and serve the dish warm alongside your choice of rice, quinoa, or grilled vegetables.
