- Mix Dry Ingredients: In a medium bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, and garlic powder thoroughly.
- Add Wet Ingredients: Stir in the shredded cheddar cheese, milk, and egg until a thick batter forms and all ingredients are well combined.
- Fold in Jalapeños and Corn: Gently fold in the finely chopped fresh jalapeños and drained canned corn kernels to distribute evenly throughout the batter.
- Heat Oil: Heat oil in a deep pan or skillet over medium heat until hot and ready for frying.
- Fry Nuggets: Using a spoon or ice cream scoop, carefully drop small spoonfuls of batter into the hot oil without overcrowding the pan to ensure even cooking.
- Cook Until Golden: Fry the nuggets for 2-3 minutes on each side or until they turn golden brown and crispy on the outside.
