Instructions

  1. Prepare the peanut butter mixture: In a large bowl, combine the creamy peanut butter and thawed Cool Whip. Mix thoroughly until smooth and fully combined for a creamy base.
  2. Add powdered sugar: Gradually add the powdered sugar to the peanut butter and Cool Whip mixture, stirring continuously until a thick dough forms that holds shape well.
  3. Shape the candies: Line a baking sheet with parchment paper. Using a tablespoon, scoop and roll the mixture into small balls or press into square shapes, placing each piece on the prepared baking sheet evenly spaced.
  4. Freeze the candies: Place the baking sheet in the freezer for 30 to 45 minutes to let the candy pieces firm up and become easier to coat.
  5. Melt the chocolate: While the candies chill, melt the chocolate chips together with the optional coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring after each until the chocolate is completely smooth and glossy.
