Ingredients
Scale
Peanut Butter Mixture
- 1 cup creamy peanut butter
- 1 tub (8 oz) Cool Whip (thawed)
- 1 1/4 cups powdered sugar
Chocolate Coating
- 12 oz chocolate chips (semi-sweet or milk chocolate)
- 1 tbsp coconut oil or vegetable shortening (optional, for smoother melting)
Instructions
- Prepare the peanut butter mixture: In a large bowl, combine the creamy peanut butter and thawed Cool Whip. Mix thoroughly until smooth and fully combined for a creamy base.
- Add powdered sugar: Gradually add the powdered sugar to the peanut butter and Cool Whip mixture, stirring continuously until a thick dough forms that holds shape well.
- Shape the candies: Line a baking sheet with parchment paper. Using a tablespoon, scoop and roll the mixture into small balls or press into square shapes, placing each piece on the prepared baking sheet evenly spaced.
- Freeze the candies: Place the baking sheet in the freezer for 30 to 45 minutes to let the candy pieces firm up and become easier to coat.
- Melt the chocolate: While the candies chill, melt the chocolate chips together with the optional coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring after each until the chocolate is completely smooth and glossy.
- Coat the candies: Using a fork or dipping tool, dip each chilled candy piece into the melted chocolate, allowing excess chocolate to drip off before returning the coated piece back onto the baking sheet.
- Set the chocolate coating: Once all candies are coated with chocolate, refrigerate them for about 15 to 20 minutes until the chocolate hardens and sets completely.
- Store properly: Keep the finished candies in an airtight container in the refrigerator to maintain freshness and texture.
Notes
- Add a pinch of sea salt on top before the chocolate sets to enhance flavor with a sweet-salty combination.
- Use crunchy peanut butter instead of creamy for added texture inside the candy.
- These candies can be made ahead and frozen for up to one month for convenience and longer storage.
