Instructions
- Mash Chickpeas: In a medium bowl, mash the chickpeas with a fork until chunky but combined.
- Prepare Salad: Stir in mayonnaise, Dijon mustard, lemon juice, celery, red onion, parsley, garlic powder, salt, and pepper until well mixed.
- Assemble Sandwiches: Spread the chickpea salad evenly over half of the bread slices or English muffin halves. Top each with shredded cheese and cover with remaining bread slices.
