Description

These Irresistible Apple Pie Enchiladas are a delightful fusion of classic apple pie flavors wrapped in a soft flour tortilla, baked to perfection, and served with a decadent caramel drizzle. This dessert is a perfect combination of sweet, spiced apples with a hint of cinnamon and nutmeg, all rolled up like enchiladas and baked until golden and bubbly.

Apple Filling:

  • 2 cups apple pie filling (homemade or canned)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Enchiladas:

  • 6 flour tortillas (8-inch)

Sauce:

  • 1/4 cup unsalted butter
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract

Serving:

  • Caramel sauce and vanilla ice cream for serving (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Mix Apple Filling: In a bowl, mix the apple pie filling with cinnamon and nutmeg.
  3. Fill Tortillas: Spoon about 1/3 cup of the apple mixture down the center of each tortilla. Roll up tightly like an enchilada and place seam-side down in the prepared baking dish.
  4. Prepare Sauce: In a saucepan over medium heat, melt the butter. Add brown sugar, granulated sugar, and water. Bring to a boil, reduce heat, and simmer for 3 minutes, stirring constantly. Remove from heat and stir in vanilla extract.
  5. Add Sauce and Bake: Pour the sauce evenly over the rolled tortillas. Bake for 20–25 minutes, or until the sauce is bubbly and the tortillas are golden.
  6. Serve: Let cool slightly before serving. Drizzle with caramel sauce and serve with a scoop of vanilla ice cream, if desired.

Notes

  • For added crunch, sprinkle chopped pecans inside the enchiladas or on top before baking.
