- 1 teaspoon baking soda

- 2 tablespoons rolled oats (plus more for topping)
- 2 tablespoons brown sugar or honey
Wet Ingredients:
- 1 3/4 cups buttermilk
Instructions
- Preheat and Prepare: Preheat the oven to 425°F (220°C) and grease a 9×5-inch loaf pan or line with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine whole wheat flour, all-purpose flour, baking soda, salt, oats, and brown sugar.
- Add Wet Ingredients: Make a well in the center, pour in buttermilk, and mix until just combined.
- Bake: Transfer the dough to the loaf pan, sprinkle oats on top, and bake at 425°F for 30 minutes, then reduce to 400°F and bake for 15–20 minutes more.
- Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added texture, mix in 2 tablespoons of wheat germ or ground flaxseed.
