Ingredients
Scale
For the Potatoes:
- 1 1/2 pounds baby potatoes (or regular potatoes, cut into chunks)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
For the Honey Mustard Sauce:
- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard (optional, for extra texture)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar or lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
- Prepare the potatoes: Wash the baby potatoes thoroughly. If using regular potatoes, cut them into chunks. Toss the potatoes with 2 tablespoons of olive oil, salt, pepper, and 1 teaspoon of dried thyme if using.
- Roast the potatoes: Spread the potatoes evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes or until the potatoes are golden brown and fork-tender. Stir halfway through roasting to ensure even cooking.
- Make the honey mustard sauce: In a small bowl, whisk together 3 tablespoons honey, 3 tablespoons Dijon mustard, 1 tablespoon whole-grain mustard (if using), 1 tablespoon olive oil, 1 tablespoon apple cider vinegar or lemon juice, and salt and pepper to taste until well combined.
- Toss the potatoes in sauce: Once the potatoes are roasted, transfer them to a large bowl and pour the honey mustard sauce over them. Toss gently to coat all the potatoes evenly in the sauce.
- Serve: Serve the honey mustard potatoes warm as a tasty side dish with your favorite main course.
Notes
- You can substitute apple cider vinegar with fresh lemon juice depending on your taste.
- Using whole-grain mustard adds texture and a deeper flavor but can be omitted if preferred.
- For a spicier kick, add a pinch of cayenne pepper to the honey mustard sauce.
- Ensure the potatoes are evenly coated with olive oil before roasting for better crispiness.
- This dish can be made with regular potatoes cut into chunks if baby potatoes are unavailable.
