Description

This Honey Mustard Chicken recipe features juicy, tender boneless skinless chicken thighs baked in a sweet and tangy honey mustard sauce infused with fresh thyme. Perfectly balanced with the richness of Dijon mustard and the sweetness of honey, this easy oven-baked dish is flavorful and quick to prepare, making it an ideal weeknight dinner for 4 servings.

Ingredients

Scale

Chicken

  • 2 ¼ pounds boneless, skinless chicken thighs (about 8 thighs)
  • Salt and pepper, to taste
  • 3 sprigs fresh thyme
  • Chopped fresh parsley, for garnish (optional)

Sauce

  • ½ cup Dijon mustard
  • ½ cup honey
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Preheat and Prep: Preheat your oven to 400 degrees F (200 degrees C). Lightly coat a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Make Sauce: In a small bowl, whisk together the Dijon mustard, honey, and extra virgin olive oil until smooth and well combined.
  3. Season and Bake Chicken: Arrange the chicken thighs in a single layer in the prepared baking dish. Season both sides with salt and pepper to taste. Pour the honey mustard sauce over the chicken, turning each piece to fully coat it with the sauce. Tuck the fresh thyme sprigs between the chicken thighs for added flavor. Place the dish in the oven and bake for about 30 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken registers 165 degrees F (75 degrees C). Halfway through baking, baste the chicken with the sauce from the pan to keep it moist and flavorful.
  4. Serve: Remove the chicken from the oven and allow it to rest for 5 minutes to redistribute juices. Serve the chicken with some of the remaining sauce spooned over the top. Garnish with freshly chopped parsley if desired for a fresh, vibrant touch.

Notes

  • Using chicken thighs ensures juicy and flavorful meat that remains tender after baking.
  • Basting halfway through baking helps keep the chicken moist and enhances flavor.
  • Fresh thyme adds a subtle herbal aroma; you can substitute with dried thyme if needed.
  • Make sure to check the internal temperature to guarantee safe cooking.
  • Serve with rice, roasted vegetables, or a simple side salad for a complete meal.
