Instructions
- Prep: Peel the carrots if not already done. Then slice the carrots on a diagonal into pieces about 1 to 1.5 inches long. For larger, thicker carrots, slice them in half lengthwise as well for even cooking.
- Toss Carrots: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss thoroughly to ensure each carrot piece is evenly coated with the glaze mixture.
- Spread on Sheet Pan: Pour the glazed carrots onto a sheet pan and spread them out into a single layer to allow for even roasting and caramelization.
- Roast: Place the sheet pan in a preheated oven at 425°F (220°C). Roast the carrots for 20 to 25 minutes, tossing them halfway through to promote even cooking and browning. For extra caramelization on the edges, broil the carrots for an additional 2-3 minutes if desired.
- Garnish and Serve: Transfer the roasted honey glazed carrots to a serving dish and sprinkle with freshly chopped parsley, thyme, or your preferred herbs for a fresh, aromatic finish. Serve warm alongside your favorite entrees.
