Description

Honey Glazed Carrots are a simple yet delicious side dish featuring tender roasted carrots coated in a sweet and savory honey butter glaze, enhanced with garlic and a bright squeeze of lemon. Perfect for complementing any meal, this recipe offers a quick roasting method that brings out the natural sweetness of the carrots while adding a rich, flavorful finish.

Ingredients

Scale

Carrots

  • 2 pounds medium carrots (about 8)
  • 3 cloves garlic

Glaze and Seasoning

  • 3 tablespoons unsalted butter
  • 1 1/2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 small lemon
  • Chopped fresh parsley leaves, for garnish (optional)

Instructions

  1. Preheat Oven: Arrange a rack in the middle of the oven and preheat to 425°F (220°C) to prepare for roasting the carrots evenly.
  2. Prepare Carrots: Peel the carrots and trim the ends. Cut them into evenly sized pieces for uniform cooking, then spread them out on a baking sheet in a single layer.
  3. Make Honey Glaze: Melt the unsalted butter in a small saucepan or microwave, then add the minced or crushed garlic and honey. Whisk together thoroughly to combine the flavors into a smooth glaze.
  4. Coat Carrots: Drizzle half of the prepared honey glaze over the carrots on the baking sheet. Sprinkle with kosher salt and freshly ground black pepper to season. Toss the carrots gently to ensure they are well coated in the glaze and seasoning.
  5. Roast Carrots: Place the baking sheet in the preheated oven and roast the carrots for 15 minutes. After 15 minutes, remove the sheet and toss the carrots to promote even browning. Return to the oven and roast for an additional 15 to 20 minutes, or until the carrots are tender and caramelized.
  6. Finish and Garnish: Once the carrots are roasted, remove them from the oven and drizzle the remaining honey glaze over them. Squeeze the juice of half a small lemon over the carrots and toss gently to combine. Optionally, sprinkle with chopped fresh parsley for a pop of color and added freshness before serving.

Notes

  • Adjust roasting time slightly depending on the size of carrot pieces to avoid overcooking.
  • For a spicier version, add a pinch of cayenne pepper or red pepper flakes to the glaze.
  • Use freshly ground black pepper for the best flavor impact.
  • Ensure the carrots are spread out evenly on the baking sheet for uniform roasting and caramelization.
  • Leftover honey glazed carrots can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
