Vegetables & Seasoning

  • ¾ lb. (12 oz) fresh green beans, ends trimmed
  • 1 tablespoon toasted sesame oil
  • ¼ teaspoon coarse salt
  • ¼ teaspoon black pepper

Glaze Thickener & Garnish

  • 2 tablespoons cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 green onions, sliced on the bias (green parts only)
  • Pinch of red pepper flakes (optional)
  • Pinch of sesame seeds (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400℉. Line a large baking sheet with parchment paper to prevent sticking and help with easy cleanup.
  2. Make Marinade: In a bowl, whisk together coconut aminos, honey, minced garlic, and lemon juice until the honey dissolves completely, creating a smooth marinade and sauce base.
  3. Marinate Shrimp: Pour half of the sauce over the shrimp in a bowl and toss to coat evenly. For enhanced flavor, you may marinate the shrimp in the refrigerator for 30 minutes up to 24 hours.
  4. Prepare Green Beans: Toss the green beans with toasted sesame oil, coarse salt, and black pepper. Spread them evenly on the prepared baking sheet and roast in the oven for about 12 minutes until they achieve a tender-crisp texture.
  5. Add Shrimp to Pan: Remove the baking sheet from the oven and push the green beans to one side. Using a slotted spoon, transfer the marinated shrimp to the other side of the baking sheet, discarding any leftover marinade liquid to avoid sogginess.
  6. Roast Shrimp: Return the baking sheet to the oven and cook for another 8-10 minutes, adjusting cooking time based on shrimp size. Smaller shrimp will cook faster.
  7. Prepare Glaze: While the shrimp roasts, heat the reserved sauce in a small saucepan over medium-high heat until it simmers. In a small bowl, whisk cornstarch with 2 tablespoons water to make a slurry. Slowly whisk the slurry into the simmering sauce. Stir occasionally and continue heating for 2-3 minutes until it thickens to a glaze consistency.
  8. Toss & Serve: Transfer the cooked shrimp and green beans to a large bowl. Pour the thickened honey garlic glaze over them and toss well to coat evenly. Garnish with sliced green onions, red pepper flakes, and sesame seeds if desired. Serve immediately, ideally with rice for a complete meal.
