Scale
Dry Ingredients
- 1 1/2 cups almond flour
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 3 large eggs at room temperature
- 1/2 cup unsalted butter, melted and slightly cooled
- 1/2 cup plain yogurt or sour cream
- 1/3 cup milk
- 1/2 cup honey (divided: 1/2 cup in batter, 2 tablespoons for drizzling)
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
Topping
- 1/2 cup sliced almonds
- 2 tablespoons honey for drizzling
Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper to ensure easy removal of the cake.
- Mix Dry Ingredients: In a large bowl, whisk together the almond flour, all-purpose flour, granulated sugar, baking powder, baking soda, and salt until fully combined and aerated.
- Combine Wet Ingredients: In a separate bowl, whisk the eggs, melted butter, 1/2 cup honey, yogurt, milk, vanilla extract, and almond extract thoroughly until the mixture is smooth and homogenous.
- Form the Batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to maintain a tender crumb.
- Transfer and Top: Pour the batter into the prepared cake pan, smoothing the top evenly with a spatula. Sprinkle the sliced almonds evenly over the batter.
- Bake: Place in the oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Cool: Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Finish and Serve: Warm the remaining 2 tablespoons of honey slightly and drizzle it over the cooled cake just prior to serving to add shine and extra sweetness.
Notes
- This cake stays moist for several days due to the honey and almond flour content.
- For enhanced flavor, toast the sliced almonds lightly before sprinkling them on top.
- You can substitute plain yogurt with Greek yogurt for a richer, tangier taste.
- Adding orange zest to the batter can provide a bright citrus twist to the cake.
