For the Maple Pancakes

Instructions
- Prepare the Pancake Batter: In a medium bowl, whisk together the dry ingredients – flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the buttermilk, egg, melted butter, and maple syrup. Combine the wet and dry ingredients carefully, mixing until just blended to avoid overworking the batter.
- Cook the Mini Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour about 2 tablespoons of batter into pancake rings or free-form small circles approximately 3 inches in diameter. Cook each side for 1 to 2 minutes until golden brown and set. Repeat until you have made 8 mini pancakes and set them aside.
- Cook the Sausage Patties: Using the same skillet, cook the breakfast sausage patties over medium heat until browned and fully cooked through. Remove from the skillet and set aside to keep warm.
- Cook the Eggs: Grease egg rings in the skillet if available, then crack the eggs inside. Season with salt and pepper. Cook until just set, flipping the eggs carefully if desired for even cooking. Remove from heat once done.
- Assemble the Sandwiches: Layer the sandwich starting with one mini pancake as the base, add a slice of cheese, then a cooked egg, followed by a sausage patty, and top it all with another pancake. Serve the sandwiches warm for the best flavor and texture.
