  • 2 ripe bananas, mashed
  • 2 cups old-fashioned rolled oats
  • ½ cup chopped nuts (walnuts, almonds, or pecans)
  • ¼ cup honey or maple syrup
  • ¼ cup peanut butter or almond butter
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ⅓ cup mini chocolate chips or dried fruit (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, combine mashed bananas, peanut butter, honey, and vanilla extract until smooth.
  3. Add Dry Ingredients: Stir in oats, chopped nuts, cinnamon, and salt until well combined. Fold in chocolate chips or dried fruit if using.
  4. Bake: Spread the mixture in the pan, press down firmly, and bake for 20–25 minutes until set.
