Description

Herb-Infused Butter Poached Lobster Tails offer a luxurious seafood experience with tender lobster meat gently cooked in aromatic melted butter infused with garlic, fresh thyme, tarragon, and lemon zest. This elegant recipe is perfect for a special occasion or holiday dinner, delivering rich flavors while keeping the lobster moist and succulent.

Ingredients

Scale

Seafood

  • 2–4 lobster tails (5–6 oz each)

Butter Sauce

  • 1 cup unsalted butter (cut into pieces)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh tarragon or parsley (chopped)
  • 1 teaspoon lemon zest
  • Salt to taste
  • Lemon wedges for serving

Instructions

  1. Prepare Lobster Tails: Using kitchen shears, carefully cut the top shell of each lobster tail down the middle to expose the meat. Gently lift the meat above the shell while keeping it attached at the base to butterfly the tails.
  2. Infuse Butter: In a medium saucepan over low heat, slowly melt the unsalted butter without boiling it. Add the minced garlic, fresh thyme leaves, chopped tarragon or parsley, and lemon zest. Stir the mixture gently and allow it to infuse for 3–4 minutes to develop rich herbal flavors.
  3. Poach Lobster Tails: Submerge the prepared lobster tails mostly into the melted butter. Maintain low heat and gently poach the lobster tails for 10–12 minutes or until the meat becomes opaque and tender. Be careful not to let the butter boil to avoid overcooking.
  4. Serve: Remove the lobster tails from the butter and transfer them immediately to serving plates. Spoon some of the herb-infused butter over the top for extra flavor and serve with fresh lemon wedges on the side for a bright, citrusy contrast.

Notes

  • Serve with risotto, mashed potatoes, or over pasta for a luxurious main dish.
  • For deeper flavor, poach the lobster tails with the shells on and peel them just before serving.
  • Handle lobster tails gently to maintain their delicate texture.
  • Ensure butter does not boil during poaching to keep lobster tender.
