- 1/3 cup chicken broth

Garlic Herb Butter
- 1/2 cup unsalted butter
- 7–9 garlic cloves, minced
- 1/3 cup chopped fresh dill
- 1/3 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare Potatoes: Place cubed potatoes in a large bowl and cover them with cold water. Drain and rinse them thoroughly to remove excess starch.
- Season Potatoes: Arrange the potatoes evenly on the prepared baking sheet. Pour 1/3 cup of chicken broth over them and season with salt to taste.
- Bake Covered: Cover the baking sheet tightly with aluminum foil and bake the potatoes for 35-40 minutes, or until they are tender when pierced with a fork.
- Make Garlic Butter: While the potatoes bake, melt 1/2 cup of unsalted butter in a saucepan over medium heat. Add the minced garlic and chopped fresh herbs (dill, parsley, and chives) to infuse the butter with flavor.
- Toss and Serve: Once the potatoes are cooked, remove the foil and drizzle the garlic herb butter over them. Toss gently to coat evenly and season with additional sea salt and ground black pepper if desired. Serve immediately for best flavor and texture.

- Peeling the potatoes is optional; leaving the skin on adds texture and nutrients.
- Use fresh herbs for the best flavor, but dried herbs can be substituted if necessary (use about one-third the amount).
