Description

Healing Chicken and Rice Soup is a comforting and nourishing dish that is perfect for colds, chilly nights, or anytime you need a warm and wholesome meal. This soup is packed with aromatic vegetables, tender chicken, and fragrant spices, all simmered together to create a flavorful and soothing broth.


Ingredients

Vegetables:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced

Seasonings:

  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste

Other:

  • 1 cup jasmine or basmati rice (uncooked)
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie or leftover)
  • 1 tablespoon lemon juice (plus more to taste)
  • 2 tablespoons chopped fresh parsley or dill (optional)

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
  2. Add Spices & Rice: Stir in ginger, turmeric, salt, and pepper. Add the uncooked rice and stir to coat.
  3. Simmer the Soup: Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15–20 minutes until the rice is tender.
  4. Add Chicken & Finish: Stir in the shredded chicken and simmer for 5 more minutes until heated through. Add lemon juice and adjust seasoning to taste.
  5. Serve: Ladle into bowls and top with fresh herbs if desired. Serve warm with extra lemon on the side.

  • For extra richness, stir in a knob of butter or a splash of coconut milk before serving.
