Other:
- 1 cup jasmine or basmati rice (uncooked)
- 6 cups chicken broth
- 2 cups cooked shredded chicken (rotisserie or leftover)
- 1 tablespoon lemon juice (plus more to taste)
- 2 tablespoons chopped fresh parsley or dill (optional)
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
- Add Spices & Rice: Stir in ginger, turmeric, salt, and pepper. Add the uncooked rice and stir to coat.
- Simmer the Soup: Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15–20 minutes until the rice is tender.
- Add Chicken & Finish: Stir in the shredded chicken and simmer for 5 more minutes until heated through. Add lemon juice and adjust seasoning to taste.
- Serve: Ladle into bowls and top with fresh herbs if desired. Serve warm with extra lemon on the side.

- For extra richness, stir in a knob of butter or a splash of coconut milk before serving.
