Description

These Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce are a delicious and wholesome meal option that is perfect for lunch or dinner. Tender grilled chicken paired with nutritious broccoli and flavorful garlic sauce make for a satisfying and nutritious bowl.

Ingredients

Scale

For the Grilled Chicken:

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Broccoli:

  • 4 cups broccoli florets
  • 1 tablespoon olive oil

Additional Ingredients:

  • 2 cups cooked brown rice or quinoa
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the Grill: Preheat grill or grill pan to medium-high heat.
  2. Prepare the Chicken: Rub chicken breasts with 2 tablespoons olive oil, garlic powder, paprika, salt, and pepper. Grill for 5–6 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
  3. Cook the Broccoli: Steam or roast broccoli until tender-crisp.
  4. Make the Garlic Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, garlic, parsley, salt, and pepper until smooth.
  5. Assemble the Bowls: Divide brown rice or quinoa among 4 bowls. Top with sliced grilled chicken and broccoli. Drizzle with garlic sauce and serve warm.

Notes

  • For a lighter version, use all Greek yogurt in the sauce instead of mayonnaise.
  • You can swap broccoli for roasted Brussels sprouts, zucchini, or asparagus.
