- 1 cup cooked chickpeas or black beans (optional)
- 1 avocado (sliced)
- 1 cup shredded cabbage or lettuce

- ¼ cup fresh cilantro (chopped)
- ½ cup crumbled feta or cotija cheese (optional)

Green Goddess Sauce
- ½ cup plain Greek yogurt (or vegan yogurt)
- 1 avocado
- 1 cup fresh herbs (mix of parsley, basil, chives, cilantro)
- 1 garlic clove
- 1 tablespoon lemon or lime juice
- 1–2 tablespoons olive oil
- salt and pepper to taste
- water to thin (as needed)
Instructions
- Prepare the Green Goddess Sauce: Blend the Greek yogurt, avocado, fresh herbs, garlic, lemon or lime juice, olive oil, salt, and pepper in a food processor or blender. Add water gradually to achieve a smooth, pourable consistency. Taste and adjust seasoning as needed.
- Warm the Tortillas and Heat Beans (if using): Warm the tortillas in a skillet over medium heat or microwave until soft and pliable. In a separate pan, heat the cooked chickpeas or black beans with olive oil and a pinch of salt for a few minutes until warmed through.
- Assemble the Tacos: Lay out each tortilla and layer with shredded cabbage or lettuce, warmed beans or chickpeas, diced cucumber, avocado slices, sliced green onions, and chopped cilantro. Drizzle generously with the prepared Green Goddess sauce and sprinkle with crumbled feta or cotija cheese, if using.
- Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top, enhancing the fresh flavors.
