Description

This Greek Lemon Rice is a vibrant and flavorful side dish perfect for adding a fresh, zesty twist to your meals. Made with long-grain white rice cooked in chicken broth infused with lemon juice, lemon zest, and aromatic herbs like parsley and dill, it offers a bright citrus flavor and a tender, fluffy texture. Ideal for serving alongside grilled meats, seafood, or vegetarian entrees, this recipe is easy to prepare and brings a refreshing Mediterranean flair to your table.

Ingredients

Scale

Rice and Aromatics

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice

Liquids and Seasonings

  • 2 1/2 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Herbs

  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill

Instructions

  1. Heat and Sauté Aromatics: In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing them until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Toast the Rice: Add 1 cup of long-grain white rice to the pan with the sautéed onion and garlic. Stir continuously for about 2-3 minutes until the rice grains are lightly golden and toasted, bringing out a nutty flavor.
  3. Add Liquids and Seasonings: Pour in 2 1/2 cups chicken broth, 1/4 cup fresh lemon juice, and sprinkle 1 teaspoon lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper into the saucepan. Stir to combine all ingredients well.
  4. Simmer the Rice: Bring the mixture to a gentle boil, then reduce the heat to low and cover the saucepan with a lid. Let it simmer for about 18-20 minutes or until the rice is tender and has absorbed all the liquid.
  5. Rest and Fluff: Remove the saucepan from heat and let it sit covered for an additional 5 minutes. After resting, fluff the rice gently with a fork to separate the grains.
  6. Add Fresh Herbs and Serve: Stir in 1/4 cup chopped fresh parsley and 2 tablespoons chopped fresh dill evenly into the rice. Serve warm as a delightful side dish that pairs well with a variety of main courses.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Use freshly squeezed lemon juice and zest for the best bright flavor.
  • Do not stir the rice too much while it’s cooking to avoid a mushy texture.
  • Letting the rice rest after cooking allows it to steam and become fluffier.
  • Add a pinch of crushed red pepper flakes for a slight kick if desired.
