For the Chicken Marinade

Instructions
- Prepare the Marinade: In a large bowl or resealable bag, combine olive oil, lemon juice, minced garlic, red wine vinegar, Greek yogurt, dried oregano, salt, and black pepper. Mix these ingredients thoroughly to create a flavorful marinade.
- Marinate the Chicken: Add the chicken thighs or breasts to the marinade, making sure each piece is well coated. Seal the bowl or bag and refrigerate for at least 30 minutes, or up to 8 hours, to allow the flavors to penetrate the meat.
- Preheat the Cooking Surface: Heat a grill or skillet over medium-high heat until hot and ready to cook. This will ensure a nice sear and char on the chicken.
- Cook the Chicken: Place the marinated chicken onto the grill or skillet. Cook for 5–6 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is nicely charred on the outside.

- Assemble the Gyros: Warm the pita breads briefly to make them pliable. Layer each pita with chopped lettuce, diced tomatoes, sliced red onions, cucumber slices, crumbled feta cheese, and sliced chicken strips.
- Add Tzatziki and Serve: Drizzle tzatziki sauce over the fillings in each pita, wrap them up, and serve immediately for a delicious, authentic Greek gyro experience.
