Instructions

  2. Whisk Egg Yolks: In a separate bowl, whisk the egg yolks and the remaining sugar until pale and thick. Slowly temper the yolks by whisking in about 1/2 cup of the hot cream mixture.
  3. Cook Custard: Gradually whisk the tempered yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  4. Strain and Chill Custard: Strain the custard through a fine sieve into a clean bowl to remove the vanilla pod and any cooked egg bits. Cover the bowl and refrigerate for at least 4 hours or overnight to chill thoroughly.
  5. Prepare Fig Mixture: While custard chills, combine the chopped figs, honey, and optional brandy in a small saucepan. Simmer for 5 minutes, stirring occasionally, until the figs soften and the mixture becomes syrupy. Allow to cool completely.
