Cauliflower:
- 1 large head cauliflower, cut into florets
Other Ingredients:
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 8 ounces cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- juice of 1/2 lemon
Instructions
- Heat Skillet: Heat olive oil and 2 tablespoons butter in a large skillet over medium heat.
- Cook Cauliflower: Add cauliflower and cook for 6–8 minutes until lightly browned and starting to soften.
- Add Mushrooms: Add remaining butter and mushrooms. Cook for 5–6 minutes until mushrooms are golden.
- Season: Stir in garlic, salt, pepper, paprika, and red pepper flakes. Cook until fragrant.
- Finish: Toss everything together and cook until cauliflower is tender. Remove from heat and sprinkle with Parmesan, parsley, and lemon juice.

- To make it vegan, replace butter with olive oil and omit Parmesan or use nutritional yeast.
