Ingredients
Scale
Potatoes
- 2 lbs baby potatoes (Yukon Gold, red, or fingerling), halved or quartered
Seasoning
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Optional
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil to ensure easy cleanup later.
- Prepare the Potatoes: In a large bowl, toss the halved or quartered potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until all pieces are evenly coated with the flavorful mixture.
- Roast the Potatoes: Spread the potatoes in a single even layer on the prepared baking sheet, taking care not to overcrowd them to allow for crispiness. Roast in the oven for 35-40 minutes, tossing them halfway through cooking to promote even browning, until golden brown on the outside and tender inside.
- Optional Parmesan: If you choose to add Parmesan cheese, sprinkle it over the potatoes during the last 5 minutes of roasting to achieve a deliciously crispy, cheesy finish.
- Garnish and Serve: Remove the roasted potatoes from the oven and optionally garnish with fresh parsley. Serve while hot for the best flavor and texture.
Notes
- Cut potatoes into similar sizes for even cooking.
- Use parchment paper or foil to prevent sticking and ease cleanup.
- Tossing the potatoes halfway through roasting ensures even browning on all sides.
- Fresh herbs enhance flavor more than dried but both work well.
- Adding Parmesan cheese is optional but adds a nice crispy, savory finish.
- These potatoes are best served immediately for optimal crispiness but can be reheated.
