Description

This Garlic Butter Steak Bites with Mashed Potatoes and Green Beans recipe offers a delicious and hearty meal featuring perfectly seared sirloin steak cubes tossed in garlic butter, creamy Yukon gold mashed potatoes, and tender-crisp garlic green beans. It’s a comforting American classic ideal for weeknight dinners or special occasions.

Ingredients

Scale

For the Steak Bites

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme or parsley, chopped
  • Salt and black pepper, to taste

For the Mashed Potatoes

  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter
  • Salt and pepper, to taste

For the Green Beans

  • 12 ounces fresh green beans, trimmed
  • 1 tablespoon olive oil or butter
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prepare the Mashed Potatoes: Add the peeled and cubed Yukon gold potatoes to a large pot of salted water. Bring it to a boil and cook for 15-18 minutes or until the potatoes are fork-tender. Drain the water and return the potatoes to the pot. Add whole milk and unsalted butter, then mash the mixture until smooth and creamy. Season with salt and pepper to taste. Cover the pot to keep warm.
  2. Cook the Green Beans: While the potatoes are cooking, blanch the trimmed green beans in boiling salted water for 2-3 minutes until tender-crisp. Immediately transfer the beans to an ice bath to halt the cooking process. Drain and set aside. Just before serving, heat olive oil or butter in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add the green beans and cook for 2-3 minutes until warmed through. Season with salt and pepper.
  3. Sear the Steak Bites: Pat the sirloin steak cubes dry with paper towels to ensure a good sear. Season them generously with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the steak cubes in a single layer, working in batches if necessary to avoid overcrowding. Cook each side for 2-3 minutes until browned and cooked to your preferred doneness.
  4. Toss Steak in Garlic Butter: Reduce the skillet heat to medium-low. Add unsalted butter and minced garlic to the pan, stirring to melt the butter and infuse it with garlic flavor. Toss the cooked steak bites in the garlic butter for 1-2 minutes to ensure they are well-coated and aromatic. Sprinkle with fresh thyme or parsley before removing from heat.
  5. Serve: Plate the garlic butter steak bites over the creamy mashed potatoes, and add the garlic sautéed green beans on the side. Serve immediately for the best flavor and texture.

Notes

  • For extra tenderness and flavor, use ribeye or New York strip steak instead of sirloin.
  • Add a splash of cream to the mashed potatoes for a richer, creamier texture.
  • To save time, prep the potatoes and green beans while the steak is searing.
  • Be sure not to overcrowd the pan when cooking steak bites to achieve a delicious sear.
  • The recipe is naturally gluten-free, ensuring it fits well into gluten-free diets.
