Ingredients
Scale
Main Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp cocoa powder (unsweetened)
- 1/2 cup rolled oats
- 1/4 tsp salt
- 1/3 cup pure maple syrup or honey
- 2 tbsp coconut sugar or regular sugar
- 1/4 cup coconut oil, melted
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 cup chocolate chips (dark or semi-sweet)
Instructions
- Prepare Oven and Tin: Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners to prevent sticking and make removal easier.
- Combine Ingredients: In a food processor, add the black beans, cocoa powder, rolled oats, salt, maple syrup, coconut sugar, melted coconut oil, vanilla extract, and baking powder. This will be the base batter for your brownie bites.
- Blend Batter: Blend all the ingredients together until completely smooth and creamy, stopping to scrape down the sides of the food processor as needed to get an even mixture.
- Add Chocolate Chips: Stir the chocolate chips into the smooth batter gently to distribute them evenly without breaking them up.
- Fill and Bake: Spoon the batter evenly into the prepared mini muffin tin, filling each cup. Bake in the preheated oven for 10-12 minutes or until the tops are set and a toothpick inserted comes out mostly clean with a few moist crumbs.
- Cool Down: Allow the brownie bites to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely. This helps them set and achieve the perfect fudgy texture.
Notes
- You can substitute honey for maple syrup but note the flavor and sweetness may vary slightly.
- Use dark chocolate chips for a richer taste or semi-sweet if you prefer it sweeter.
- Make sure to rinse and drain the black beans well to avoid any canned flavor.
- Store brownie bites in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- These brownie bites freeze well; thaw them at room temperature before serving.
