Description

Frittaffle is a creative fusion of a frittata and a waffle, combining fluffy eggs with cheese, veggies, and optional meat, all cooked in a waffle iron for a fun, savory breakfast twist. Perfect for a quick morning meal or brunch, it’s customizable, gluten-free, and low carb.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Fillings

  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/4 cup diced cooked bacon or sausage (optional)
  • 1/4 cup diced bell pepper
  • 2 tablespoons chopped onion

Cooking

  • Nonstick cooking spray or butter for greasing the waffle iron

Instructions

  1. Preheat the waffle iron: Lightly grease your waffle iron with nonstick cooking spray or butter and allow it to get hot to ensure even cooking.
  2. Prepare the egg mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully blended and slightly frothy to incorporate air for fluffiness.
  3. Add the fillings: Fold in the shredded cheese, diced cooked bacon or sausage if using, diced bell pepper, and chopped onion evenly into the egg mixture.
  4. Cook the frittaffle: Pour enough egg mixture into the waffle iron to just cover the bottom without overfilling. Close the lid carefully and cook for 3 to 5 minutes, or until the eggs are fully set and the top is golden brown.
  5. Remove and repeat: Using a spatula, carefully remove the cooked frittaffle and repeat the process with the remaining egg mixture.
  6. Serve: Serve your frittaffles warm with accompaniments like hot sauce, sour cream, or avocado slices for extra flavor.

Notes

  • This recipe is ideal for using up leftover vegetables or cooked meats.
  • To make it vegetarian, simply omit the meat or substitute with plant-based sausage.
  • Frittaffles are best enjoyed freshly made but can be reheated in a toaster oven without losing texture.
