Ingredients
Scale
Egg Mixture
- 6 large eggs
- 1/4 cup milk
- Salt and pepper to taste
Fillings
- 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/4 cup diced cooked bacon or sausage (optional)
- 1/4 cup diced bell pepper
- 2 tablespoons chopped onion
Cooking
- Nonstick cooking spray or butter for greasing the waffle iron
Instructions
- Preheat the waffle iron: Lightly grease your waffle iron with nonstick cooking spray or butter and allow it to get hot to ensure even cooking.
- Prepare the egg mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully blended and slightly frothy to incorporate air for fluffiness.
- Add the fillings: Fold in the shredded cheese, diced cooked bacon or sausage if using, diced bell pepper, and chopped onion evenly into the egg mixture.
- Cook the frittaffle: Pour enough egg mixture into the waffle iron to just cover the bottom without overfilling. Close the lid carefully and cook for 3 to 5 minutes, or until the eggs are fully set and the top is golden brown.
- Remove and repeat: Using a spatula, carefully remove the cooked frittaffle and repeat the process with the remaining egg mixture.
- Serve: Serve your frittaffles warm with accompaniments like hot sauce, sour cream, or avocado slices for extra flavor.
Notes
- This recipe is ideal for using up leftover vegetables or cooked meats.
- To make it vegetarian, simply omit the meat or substitute with plant-based sausage.
- Frittaffles are best enjoyed freshly made but can be reheated in a toaster oven without losing texture.
