Grilled Cheese:

  • 8 slices sourdough or French bread
  • 8 slices Gruyère or Swiss cheese
  • 1 cup shredded mozzarella (optional)
  • 2 tablespoons mayonnaise or softened butter (for spreading on bread)

Instructions

  1. Caramelize Onions: In a skillet over medium heat, melt butter and olive oil. Add sliced onions, salt, and sugar. Cook slowly, stirring occasionally, for 20 to 25 minutes until deeply caramelized. Stir in balsamic vinegar and cook for another 1 to 2 minutes. Remove from heat and set aside.
  2. Assemble Sandwiches: Spread mayonnaise or softened butter on one side of each bread slice. Place 4 slices, buttered side down, on a flat surface. Top each with 1 to 2 slices of Gruyère, a generous spoonful of caramelized onions, and some shredded mozzarella if using. Add the remaining bread slices on top, buttered side up.
  3. Cook Grilled Cheese: Heat a skillet or griddle over medium-low heat. Cook sandwiches for 3 to 4 minutes per side, pressing gently, until golden brown and the cheese is melted. Slice and serve warm.
