Instructions
- Preheat Oven: Heat the oven to 190°C (Gas Mark 5 / 375°F) to ensure it reaches the perfect temperature for baking your eggs evenly.
- Prepare Ramekin: Add the salsa to the bottom of an individual ramekin. Layer the refried beans on top, then create a slight well in the centre for the egg.
- Add Egg and Cheese: Crack the egg into the well made in the beans, then sprinkle the grated cheddar cheese over the top. Season with salt and black pepper according to your taste preferences.
- Bake: Place the ramekin on a baking tray and bake in the preheated oven for around 15 minutes, or until the egg whites are fully cooked but the yolk remains slightly runny or cooked to your liking.
- Garnish and Serve: Remove from the oven, sprinkle with fresh chopped coriander, and serve immediately while warm to enjoy the best flavors.
