Instructions

  1. Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage while breaking it into small crumbles. Continue cooking until the sausage is browned and thoroughly cooked. Remove from skillet and set aside.
  2. Scramble the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Using the same skillet, cook the egg mixture over medium heat until fully scrambled and cooked through with no runny parts remaining. Set aside.
  3. Warm the Tortillas: Heat the tortillas by placing them in a dry skillet for approximately 30 seconds on each side or microwave them for 10-15 seconds until soft and pliable, making them easy to roll.
  4. Assemble the Taquitos: Place about 2 tablespoons each of the cooked sausage and scrambled eggs onto each warmed tortilla. Sprinkle a portion of shredded cheddar cheese over the filling.
  5. Roll the Taquitos: Carefully roll each tortilla tightly around the filling to form a taquito. Secure the edge with a toothpick if necessary to prevent unrolling during frying.
  6. Fry the Taquitos: Heat vegetable oil in a skillet over medium heat until hot.
