Mango Pudding:
- 2 cups ripe mango puree (from about 3 large mangoes)
- 1 cup whole milk
- 1 cup heavy cream
- ½ cup granulated sugar
- 2 teaspoons unflavored gelatin powder
- 3 tablespoons water
Garnish:
- fresh mint leaves or extra mango cubes
Instructions
- Bloom Gelatin: In a small bowl, sprinkle gelatin over water and let sit for 5 minutes to bloom.
- Prepare Pudding Mixture: In a saucepan over medium heat, combine milk, cream, and sugar, stirring until sugar dissolves (do not boil). Remove from heat and stir in bloomed gelatin until fully dissolved. Let mixture cool slightly, then stir in mango puree until smooth.
- Chill and Serve: Pour into serving cups or ramekins. Refrigerate for at least 4 hours, or until set. Garnish with mint leaves or extra mango before serving.
Notes
- For a dairy-free version, use coconut milk and coconut cream instead of milk and heavy cream.
- If your mangoes are very sweet, you can reduce the sugar to ⅓ cup.
- This pudding keeps well in the fridge for up to 3 days.
