Description

These Easy No-Bake Peanut Butter Oat Cups with a Chocolate Topping are a delicious and healthy snack option. Combining creamy peanut butter, wholesome oats, and a luscious dark chocolate layer, these no-bake treats are quick to prepare and perfect for satisfying your sweet tooth without the oven.

Ingredients

Scale

Base Ingredients

  • 1 ½ cups rolled oats
  • ½ cup natural peanut butter
  • ¼ cup honey or maple syrup
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Topping

  • ½ cup dark chocolate chips
  • 1 tablespoon peanut butter (for topping)
  • Flaky sea salt (optional)

Instructions

  1. Mix the Base: In a medium bowl, combine the rolled oats, natural peanut butter, honey or maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir well until the mixture is evenly blended and sticky.
  2. Prepare the Cup Liners: Line a muffin tin with 10 paper liners. Spoon approximately 2 tablespoons of the oat mixture into each liner, pressing down firmly to form an even base layer.
  3. Freeze the Base: Place the prepared muffin tin in the freezer for 10 to 15 minutes to allow the base to firm up before adding the chocolate layer.
  4. Melt Chocolate Topping: While freezing the base, melt the dark chocolate chips and 1 tablespoon of peanut butter together in the microwave. Heat in 20-second intervals, stirring after each until completely smooth.
  5. Apply Chocolate Layer: Remove the oat bases from the freezer and evenly spoon the melted chocolate mixture over each cup. If desired, sprinkle a pinch of flaky sea salt on top for added flavor.
  6. Set the Cups: Return the muffin tin to the freezer for another 10 to 15 minutes, or until the chocolate topping is fully set and firm.
  7. Serve and Store: Keep the oat cups refrigerated until ready to eat. These can be stored in the fridge for up to one week or frozen for longer enjoyment.

Notes

  • Substitute peanut butter with almond or cashew butter for a different flavor.
  • To add crunch to the base, mix in chopped nuts or chia seeds.
  • Store these oat cups in the refrigerator for up to 1 week or freeze them for extended storage.
