  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional:

  • ½ cup frozen peas and carrots

Garnish:

  • Chopped fresh cilantro

Instructions

  1. Toast Rice: In a large skillet over medium heat, heat vegetable oil. Add rice and cook, stirring frequently, until lightly golden brown, about 4 to 5 minutes.
  2. Saute Aromatics: Add garlic and onion, cooking for 1 to 2 minutes until softened and fragrant.
  3. Add Ingredients: Stir in tomato sauce, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes, until rice is tender and liquid is absorbed.
  4. Finish and Garnish: If using peas and carrots, stir them in during the last 5 minutes of cooking. Remove from heat, fluff with a fork, and garnish with fresh cilantro before serving.

  • For a spicier version, add a diced jalapeño with the onion and garlic.
