- 1 cup long-grain white rice

- 2 cups chicken broth
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt

Instructions
- Toast Rice: In a large skillet over medium heat, heat vegetable oil. Add rice and cook, stirring frequently, until lightly golden brown, about 4 to 5 minutes.
- Saute Aromatics: Add garlic and onion, cooking for 1 to 2 minutes until softened and fragrant.
- Add Ingredients: Stir in tomato sauce, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes, until rice is tender and liquid is absorbed.
- Finish and Garnish: If using peas and carrots, stir them in during the last 5 minutes of cooking. Remove from heat, fluff with a fork, and garnish with fresh cilantro before serving.
