Instructions
- Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for 5–6 minutes until vegetables begin to soften. Add the minced garlic and cook for another 30 seconds until fragrant.
- Add Broth and Chicken: Pour in the chicken broth and bring to a boil. Stir in the shredded cooked chicken, dried parsley, dried thyme, salt, and black pepper. Reduce the heat and let it simmer for 10–12 minutes to allow the flavors to blend.
- Cook Noodles: Add the egg noodles to the pot and cook according to the package directions, about 7–8 minutes, until the noodles are tender but not mushy.
- Adjust and Serve: Taste the soup and adjust seasoning if needed. Serve the soup hot, garnished with fresh parsley if desired for a bright, fresh touch.
