Instructions

  1. Cook Sausage Patties: Form 4 patties from the ground sausage. Heat a large skillet over medium-high heat. Cook the patties for about 3 minutes per side or until fully cooked through. Remove from heat and set aside. If using bacon, cook 8 slices until crisp and set aside.
  2. Prepare Egg Mixture: In a large bowl, whisk together 6 eggs, 1 cup milk, ½ teaspoon garlic powder, salt, and pepper until combined.
  3. Cook Omelet Squares – First Batch: Heat 1 tablespoon butter in a large skillet over medium-low heat until melted and coating the pan. Pour one-quarter of the egg mixture into the skillet, spreading flat like an omelet. Season lightly with salt and pepper. Cook undisturbed for 1 to 2 minutes until the edges set and you can flip easily.
  4. Cook Omelet Squares – Second Side and Fold: Flip the egg and cook for an additional minute until cooked through. Fold the edges of the omelet in towards the middle, then fold the top and bottom towards the middle to form a compact square stack. Remove from pan.
  5. Repeat Omelet Cooking: Add another tablespoon of butter to the skillet, melt, and repeat steps 3 and 4 for the remaining egg mixture to create four folded omelet squares total.
  6. Make Pancake Batter: In a large bowl, combine 1 1/3 cup flour, 2/3 cup milk, 3 tablespoons melted butter, 1 egg, 1.5 teaspoons baking powder, 2.5 tablespoons maple syrup, and a pinch of salt. Beat well until smooth and fully incorporated.
  7. Cook Pancakes: Coat skillet with butter and heat over medium heat. Pour about 3 tablespoons of batter per pancake into the skillet, making 2-3 pancakes at a time without overcrowding. Cook each pancake about 2 minutes until bubbles form on top and edges are set.
  8. Flip and Finish Pancakes: Flip pancakes carefully and cook for 1 additional minute or until golden and cooked through. Remove and set aside. Repeat until 8 pancakes are ready, which will serve as sandwich buns.
