Creamy and flavorful, this Easy Creamy Taco Mac is a delicious one-pot meal that combines the best of tacos and macaroni and cheese in a Tex-Mex fusion dish.

Main Ingredients:

  • 8 oz elbow macaroni or pasta of choice
  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1/2 cup sour cream

Cheese Mixture:

  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Brown the Beef: In a large skillet over medium heat, heat olive oil and brown the ground beef until fully cooked. Drain excess fat.
  3. Add Seasonings: Stir in taco seasoning and 1/2 cup water. Simmer for 2–3 minutes. Add diced tomatoes (with their juices) and stir to combine.
  4. Make the Cheese Sauce: Lower the heat and stir in sour cream and cream cheese until melted and creamy.
  5. Combine and Serve: Add the cooked pasta and shredded cheddar cheese. Stir until the cheese is melted and everything is well combined. Season with salt and pepper to taste. Serve warm, garnished with green onions or cilantro if desired.
