Ingredients

Pasta:

  • 12 oz fettuccine or penne pasta

Chicken:

  • 1 lb boneless skinless chicken breasts (sliced into strips)
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter

Vegetables:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 3 cloves garlic (minced)

Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Garnish:

  • Chopped fresh parsley for garnish

Instructions

  1. Cook the Pasta: Cook the pasta in salted water until al dente. Drain and set aside.
  2. Cook the Chicken: Season chicken with Cajun seasoning. Cook in a skillet with olive oil until browned. Set aside.
  3. Prepare the Sauce: In the same skillet, sauté bell peppers and garlic. Add cream and chicken broth. Stir in Parmesan cheese until smooth.
  4. Combine and Serve: Return chicken to skillet, add pasta, and toss in the sauce. Cook until heated through. Adjust seasoning, garnish with parsley, and serve.

Notes

  • Use store-bought Cajun seasoning or make your own blend with paprika, garlic powder, onion powder, cayenne, and oregano.
  • Add a pinch of red pepper flakes for extra heat.
  • This dish also works well with shrimp or andouille sausage instead of chicken.
